I love lentils! They are easy and
fast to cook and can be used in several different dishes. Lentils are legumes.
They are considered a starch since they are mostly carbohydrates and protein
based foods with very little fat. Lentils can be found in various shades of
red, orange, golden, brown, and even black.
In regards to nutritional quality,
these legumes are a superior food. In addition to being composed of about 26%
protein, lentils are a great source of fiber, magnesium and folate. 1 Cup
cooked lentils provides 90% of the DRI for folate and 50% DRI for Magnesium. Eat up!!
